I gigged my first flounder last night. Also, that's the first time I ever cleaned a fish then cooked it for breakfast.
No salt! Just a little seasoning.
I didn't have a fillet knife, but managed. For the underside (seen here), I left the bottom skin on. I thought it was better that way - no meat loss for such small fillets.
I also remembered the extra thing that happened - the car chase going the wrong way up I-45.

2. Homeland security inspected our car
3. The cops pulled us over in an affluent neighborhood after we were chased around by two golf cars
4. Overheated the engine and met Galvatraz zombies
5. Saw a guy holler at a convenient store clerk and then urinate on the front of the store
6. Had a cargo vessel shine its huge light on us while we were being attacked by mosquitoes
7. Lost all gears in the car. Figured out we had hit a bump on the way to a giggin' spot. The radiator fan jammed all the way into a transmission line causing the fluid to leak which subsequently stopped the car. Actually fixed that on the road doing the MacGyver of MacGyvers.
